Hot holding and colding holding techniques and temperatures observed to be adequate. The grill station: 150-162F. Discussed cook n serve procedure, with counter holding during busy period, heated plates and heat lamps utilized. The pizza deli; cold holding temps adequate: 37-44F. Soup observed hot holding, 162F, and in the kitchen 169F. Dishwasher wash and rinse temps observed to be functioning as per manufacturer's specs; wash 153F, rinse 181F, as per digital read out. During inspection, we discussed: roasts, cooking and cooling routine/procedures, cooling logs are maintained for all cooling events/foods. The storage room shelves have been painted since last inspection. The hanging caulk in the cookline hood has been removed. Hair restraints and hand barriers are worn throughout. |

Hot holding temps at the service line found to be adequate, all held at or above 140F. Cold holding unit items adequate: pizza prep 40F, sandwich prep 45F, and salad bar tuna 40F. All food contact surfaces and equipment were found to be maintained clean and sanitary. Procedures are in place and refrigerators are properly arranged, no more double stacking of products. Discussed with supervisor that the shelves in the downstairs storage will be painted over the summer. The hoods are slated to be cleaned during "Spring Break" next week. Thermometers installed in all coolers. Observed and discussed cooking and cooling procedures, a cooling temperature curve log is maintained for each product being cooled. * Management and staff are complimented for procedures and cleanliness. |
