Comments: The refrigeration from the 1-7-15 inspection were defrosted as requested. The degraded galvanized prep table bottoms will be resealed by May 2015. Prepping, cooking and holding were going on at the time of inspection. Cooking temperatures are all proper. Cold held pork, beef and chicken in the deli unit across from the wok line temped at 39, 39 and 40 degrees F respectively. Pork broth soup and sweet red sauce temped at 167 and 176 degrees F respectively. White steamer rice measured 168 degrees F and the pork fried rice measured 172 degrees F. The walk in cooler food temperatures measured 36-39 degrees F for prepped tubs of raw chicken, pork, beef and different vegetables. Bleach water sanitizer tested 50-100 ppm. All Good.
