Potato salad and Cole slaw found on service line at 50 F, both products are displayed on ice and will be used within two hours, discard any left overs. Suggested that operator use larger ice bath so that trays can be submerged in ice rather than sit on top of ice so that product is kept colder. Temperatures taken in refrigeration are acceptable.

The Traulsen refrigerator is out of service until such time as the unit can consistently maintain a temperature of less than 45 degrees F. I also mentioned to the operator that this unit appeared to going through a Defrost cycle at about 12:06 to 12:15 PM. They need to call us when this unit is able to consistently maintain a temperature below 45 degrees F. The temperature of the following items in the Walk-In Cooler were measured (degrees F): Veggie Chili - 38.0 and Salsa - 37.1. Report emailed.
