Cold hold display temperatures found to be adequate with prepared salad greens and tomatoes at 41 and 42 degrees; respectively. Salads are said to be constructed with previously chilled ingredients. Stand up 3-door refrigerator temperatures adequate with milks at 42 degrees. Probe thermometers actively being used and said to be sanitized between uses with alcohol wipes, Education given on all deficiencies. All violations must be corrected and may result in enforcement.
