All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. Patron notification for ahi tuna was discussed. Adding a catering operation was discussed. The difference between delivery and catering was discussed. Water and septic considerations for limited prep and service on site was discussed. Acceptable cold and hot holding transport equipment must be purchased prior to formal approval of operation. Please provide our office with proof of having hot holding equipment.
