When I returned to pizza counter approximately ten minutes later, I noticed that the slice had been sold. Operator states that the pizzas at the counter had been cooked at noon. I briefly discussed hot holding requirements and the option of a waiver if the ricotta cheese pie is generally not completely sold within two hours of being cooked. |
