Comments: Discussed 3-bay dishwashing procedure. Raw chicken and eggs stored in cooler over tomato sauce that will be cooked. Advised operator that it would be a better practice to store the raw chicken and eggs on the bottom shelf so there is no chance of cross contamination even though the sauce is to be cooked. Stromboli on front display cold holding was 47 degrees. Operator states that the Stromboli is moved from the reach in cooler and placed in the front display each day when the restaurant is opened. The front display cooler is turned off at night, I advised the operator that the front display must be turned on to pre-chill prior to placing food in it. Both small freezers in need of defrosting. Kitchen and restaurant overall clean and in good condition.

Hot holding: marinara sauce - 148 degrees F, meat marinara sauce - 139 degrees F (observed operator voluntarily increase heat of hot holding unit to maintain minimum temp of 140 degrees F). Observed 7 Strombolis and 2 Jamaican beef patties properly stored in cold-holding display case at 35 degrees F (45 degrees or less required), and half of one plain pizza pie left at room temp on display.
