Comments: Most violations observed during initial inspections (on 10/6/2017 and 10/20/2017) were observed again during re-inspection; operator failed to begin and complete corrections to many existing violations. Sections of floor and wall behind cooking appliances, and reach-in freezer tops and gaskets were found to be cleaned or partially cleaned; however, a thorough and adequate cleaning has not been performed. //Food on cart next to cook-line were not covered; however, they were observed to be in-use during inspection. // Note that open-top reach-in cooler appears to be operating properly (may be due to colder weather outside, causing ambient air within facility to be colder (kitchen was found to be “chilly” during inspection). Container of garlic and oil within cooler was measured to be 45F, and container of bean curds were measured to be 44F (both within upper compartment of open-top cooler). Operator stated that unit was serviced and is keeping food very cold now. Although food was measured to be 45F or less within the unit, it was not found to be significantly colder.
