Cold-holding temperatures: Open-top prep cooler - bean sprouts 37F, pork strips 38F; Prep cooler - wontons 37F; Walk-in cooler - Fried rice 42F, egg rolls 39F.

Observed proper cooling of spare ribs in walk-in cooler, measured to be 104F, placed on sheet pans and uncovered, and placed in cooler 35-40 minutes prior (per operator). Test strips and product thermometer readily available for use. Sanitizing solution properly prepared and wiping cloths stored in solution. Bathroom hand-wash sink currently out of order in that handles stopped working this morning, per operator. Operator was observed to be in the process of repairing bathroom hand-wash sink upon arrival to facility. All food workers are using washing sink (across from bathroom next to walk-in cooler) for hand-washing until bathroom sink is repaired. // Facility observed to be clean and well maintained. // Joint inspection conducted with Courtney Leistinger.
