Comments: Proper cooling of soups and gravy was observed be done in an ice water bath. Proper cooling of just cooked meatballs was observed on a sheet tray then transferred to a less than four inch deep pan and transferred to a cold unit uncovered. Good. All violations from 3/14/2014 were corrected.
