Comments: Comments only: 1. Food is washed at the three bay sink and there is a soap dispenser mounted above the sink. Currently, the soap dispenser is empty and employees are using dish detergent to wash their hands. The detergent is located in the sink. Food cannot be washed under the mounted soap dispenser if/when it contains soap due to the potential for cross contamination. 2. Dishwasher is still not injecting minimum required amount of sanitizer (50ppm). Used chlorine test papers and received no detectable chlorine residual. Per interview with Javier, all items that are removed from dishwasher are manually sanitized at the 3-bay sink as per guidance from my 12/18/15 inspection report. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

All potentially hazardous foods were transferred to other coolers prior to inspection. Currently operator is waiting for repair person to come and repair unit. Until such time as unit is repaired and capable of holding temperature at or below 45*F, unit cannot be used for cold holding potentially hazardous foods.
