However, at the Deli line, left over cheese, turkey, ham and sliced tomatoes were being transported back to the walk-in cooler for use at a later time. The temperature of the food items in question were below 45° F, however, this practice is a violation of the waiver conditions. This was discussed with the Food Service Manager and the TPHC waiver conditions were reviewed and will be adhered to in the future. Cooling logs were reviewed and found to be acceptable. Food temperatures measured in the walk-in cooler were acceptable. |
