Comments: Kitchen appears very clean and well-organized. Discussed methods for proper cook-cool-reheat of turkey breasts, beef roasts, and home-made soups. One small whole turkey breast in walk-in cooler measures 38F, was cooked yesterday morning and cooled whole in walk-in measuring 38F - that whole turkey breast appears small enough to have cooled properly, but larger roasts/breasts must to be halved/quartered to allow for proper cooling.
