Meatballs were reheated to 165 degrees f and corrected. 5A - At 10:15 AM, inspector temped using calibrated food testing thermometer chopped steak (in trays) at 52 degrees f and bologna at 54 degrees in deli cooler unit on line. Top layers of both products removed revealing prodect under 45 degrees f and the rest oved to walkin cooler. 11C - Wipe cloth bucket not makde up at arrival to inspection to allow for sanitizing of surfaces and equipment.
