Item 15B: Lighting and ventilation inadequate, fixtures not shielded, dirty ventilation hoods, ductwork, filters, exhaust fans Item 12C: Plumbing and sinks not properly sized, installed, maintained; equipment and floors not properly drained Comments: The following corrections were made in response to previous inspection: Food adequately labeled in refrigerator. Air break added to 2-bay sink. Left side will be maintained sanitized and used for washing produce; as per todays discussion. Second (right) bay of 2-bay sink designated for hand and dishwashing at time of inspection. Barrier added between bays. Sanitizing test strips available and actively used at time of inspection. Active, adequate, and measured sanitization at time of inspection. Bare wood steps have been properly sealed and are reported to be easier to clean. Concrete walls are sealed with colorless sealant. Fire Department contacted regarding placement of second extinguisher previously noted. Operator will contact local Code Enforcement to advise and assure compliance with local Code Enforcement requirements. Please notify this office when this contact is completed. Temperatures adequate with hot held eggs measured at 152 degrees. Eggs were seen to be measured upon removal from oven (and were found to be at adequate temperature) prior to service. Milk poured for service found to be at 35 degrees. Dishwasher log maintained and said to be achieving sanitizing temperature of 180 degrees; minimum. Renee Hall; Center Director and Jordan Nabinger; Kitchen Manager present at time of inspection. All violations must be corrected and may result in enforcement. Education given on all deficiencies. Jordan Nabinger; Kitchen Manager and custodian present at time of inspection. Kitchen manager actively maintains a daily log of refrigerator temperatures that she fills out twice per day. Operator actively using probe thermometer and logging temperatures taken at time of inspection. Blueberry muffins and blueberries; milk on menu. Milk temperature adequate. Blueberry temps adequate. Blueberries said to be washed prior to service. 2 fire extinguishers present in kitchen: 1 hanging on wall beside refigerator and one found to be sitting on top of cupboard near stove. Both found to be inspected March 2018 and April 2018; respectively. Discussion about more accessible placement of second extinguisher with Jordan Nabinger and suggestion made to obtain guidance from local fire department or code enforcement office for placement. Bathrooms adequate. Dry storage adequate. Sanitization measured at 100ppm and actively being used at time of inspection. Pest control said to be monthly with Erlich company. Education given on all deficiencies. All violations may result in enforcement. |
