Comments: Comments only: 1. Discussed 9/20/18 complaint with Tina Tyrnas. Tina was unaware of the complaint. There have been no other complaints regarding corned beef. 2. Several large 10 gallon containers filled with soups, sauces, and gravies present in walk in cooler. Provided education about proper cooler. When using frozen ice sticks to cool these foods, product must be stirred every 30 - 45 minutes. Ice sticks must be closely monitored and replaced with new frozen solid ice sticks as soon as they melt and rise to the top. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
