During the exit interview, management presented documentation in the form of written correspondence, referencing the FDA Model Code. Further investigation with NYSDOH will be conducted to determine if this food service establishment (FSE) has a waiver to implement TPHC. In addition, management presented documentation indicating that several food items held on the buffet line are designated as "shelf-stable" (i.e. cheese cake and carrot cake). This information will also be forwarded to NYSDOH for evaluation. |
